You know when you go to a restaurant, order something, then can never get that dish out of your head? Well, I’ve been craving Dishoom’s Chilli Cheese Toast.
Their menu is an array of traditional favourites with a modern twist, and this dish, which is a staple in any Indian household, is definitely one of my favourites.
I couldn’t wait until my next visit so I decided to give this recipe a try myself. The results? A simple, speedy and oh so scrumptious snack!

Dishoom's Chilli Cheese Toast

Ingredients
- 120-240 g Mature Cheddar
- 4 Slices of Thick Bread sour dough works well
- 4 Spring Onions chopped
- 2 Green Chilli's finely chopped
- Black Pepper
Instructions
- Heat oven to 230°C/Fan 220°C/Gas 8.
- Grate the cheese and let it come up to room temperature.
- Toast bread until lightly brown, then set aside to cool.
- Mix the cheese, spring onions, green chilli and black pepper in a bowl.
- Using the back of a spoon, firmly press the cheese mixture into the side of the bowl, working it into a paste.
- Spread the cheese mixture over the bread, pressing it in slightly.
- Place the bread in the oven for 6 minutes, or until the cheese is golden brown.
